           Keto Taco Stuffed Avocados


                       Ingredients

- 2 large ripe avocados

- 1/2 lb ground beef (or ground turkey)

- 1/2 small onion, finely chopped

- 1 clove garlic, minced

- 1 tbsp taco seasoning (store-bought or homemade)

- 1/4 cup shredded cheddar cheese (or cheese of choice)

- 1/4 cup salsa (homemade or store-bought)

- 2 tbsp sour cream

- Fresh cilantro, chopped (optional)

- Salt and pepper to taste


                        Instructions


1. Prepare the Avocados:

   - Cut the avocados in half and remove the pits. Use a spoon to gently scoop out some of the avocado flesh, creating a larger space for the filling. Set the scooped-out avocado aside.


2. Cook the Filling:

   - In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks.

   - Add the chopped onion and garlic to the skillet, cooking until softened.

   - Stir in the taco seasoning and cook for another 2 minutes, making sure the beef is evenly coated. Season with salt and pepper to taste.


3. Assemble the Stuffed Avocados:

   - Place the avocado halves on a serving plate. Spoon the cooked taco filling into each avocado half.

   - Top each with shredded cheese, salsa, a dollop of sour cream, and chopped cilantro if using.


4. Serve:

   - Enjoy your keto taco stuffed avocados immediately while they’re warm.


This recipe serves 2 as a main dish or 4 as an appetizer.
